What Is a Blondie?
A blondie is the blonde best friend to the brunette brownie—lots of similarities but with some very important differences to make it unique. Unlike a typical brownie, a blondie is made up of vanilla and brown sugar, instead of chocolate or chocolate flavoring. Blondies may also include nuts, coconut or toffee for texture. If chocolate isn’t your thing, then blondies might be your new go-to dessert. And yes, you can still enjoy it with a nice cup of coffee. Blondes have more fun, right?
Ingredients:
- 1 1/2 cups flour
- 1 1/2 teaspoons baking powder
- 12 tablespoons butter
- 1 1/2 cups brown sugar
- 3/4 teaspoon salt
- 1 egg
- 3 tablespoons Death Wish Coffee Pumpkin Chai (liquid)
- 1 1/2 tablespoons vanilla
- 1 cup semi-sweet chocolate chips (optional)
Directions:
- Preheat oven to 350 F.
- Make Death Wish Coffee Pumpkin Chai, whichever way you like. (We suggest using an AeroPress or Chemex to ensure strong coffee.)
- Mix flour and baking powder in a medium bowl.
- In a saucepan, melt butter, brown sugar and salt together. Once mixed, remove from heat and pour in coffee and stir until combined. Let cool to room temperature.
- Mix egg and vanilla into the mixture and stir until completely combined. Then pour mixture into a large bowl.
- Add the flour and baking powder mixture to the large bowl and mix.
- Add in chocolate chips and stir (optional).
- Spread batter on 9x13-inch pan.
- Cook for 20 minutes or until top is golden brown and just beginning to form small cracks.
- Remove from oven and cut into squares.
- Enjoy.
